Introduction to Culinary Arts 1-2

I am very excited and delighted to have been given the opportunity to work with all of you this year. The instruction that I will be using in the Introduction to Culinary Arts 1-2 class utilizes a combination of group learning, individual written assignments, TEAMWORK with all lab activities and continuous active participation.
The Introduction to Culinary Arts course has a classroom text entitled A Guide to Good Food. This text will be used extensively throughout this course so that all students are receiving instructional information from a standard source. To accomplish dispersal of information the students will be taking notes, doing outlines as the text is used throughout the instructional period, and learning culinary related vocabulary from a variety of sources including handouts demonstration videos, and participation activities.
GRADING:
The grading of this class will be as follows:
Lab/Participation = 45%
Tests/Quizzes = 20%
Classwork = 20%
Projects/Final = 15%
100%
Since this is partly a group lab class, I can not emphasize teamwork enough. Your contribution and attitude to the group will greatly impact the level of success of each lab that you do.
The learning objectives in this class include safety and sanitation in the kitchen, cooking terms, kitchen smallwares, major appliances and uses, cooking utensils, reading, following and extending recipes, weights and measures of ingredients, preparation techniques, organization techniques, emphasis on teamwork and communication skills, proper food handling and storage, table manners, table setting, nutrition and food choices. We will be covering material such as grain products, fruits, vegetables, eggs, dairy products, as well as many others.
To accomplish these many objectives, students will need to stay current on all classroom bookwork, and take notes that outline key ideas and critical information. I will be available during Learning Center Wednesdays to help students when they need it.
MAKE UP POLICY:
FOR LABS:
If you are absent on the day that we are cooking, you have one week to make it up at school. You can make arrangements with me to come in before or after school or during Learning Center. If you do not make it up at school within that week, you will have an additional week to make it at home and bring in a serving*.
*If you make it up at home, there is no guarantee that I will be able to provide any of the necessary ingredients for the recipe, but I will do my best to make sure that you have the essentials.
ASSIGNMENTS/TESTS/QUIZZES:
You will have two (2) weeks to make up any missed quizzes, tests or assignments. There is no make up for bellwork that is not turned in.

Please take these rules home and review them with your parents/guardians. After reviewing the Rules of the Classroom, please sign the bottom, and turn it in. This will in effect serve as your contract with the teacher for the class that you understand these Rules and Expectations.
